This extraordinary chef was born and raised in Oregon, and thus he was exposed to Pacific Northwest cuisine. Common fare in his cooking exploits were salmon, shellfish, game meat such as moose, elk, and caribou, mushrooms, small fruits, hardy vegetables, and wild plants. Additionally, his various varieties of freshly baked breads became famous.


Beard was an American cookbook author, teacher, columnist, and television personality. James was a champion of American cuisine who taught generations of professional chefs and food enthusiasts. His accomplishment live on in twenty books.
